How to make your own Kefir

While it is debated whether ingesting GcMaf from Milk Kefir orally is effective (see https://brandonlagreca.com/gcmaf/) Kefir’s health benefits are undisputed ( see https://www.healthline.com/nutrition/9-health-benefits-of-kefir#section1 )

And personally, I do believe the GcMaf as well as the probiotics that are so beneficial in Kefir survive the digestive tract. Otherwise, why would Kefir be so beneficial? And how have they found GcMaf in the first place? I believe through looking at Kefir. And then, of course they have to pretend that GcMaf can only be obtained through their expensive drugs, and is not something you can make yourself or free.

The figs in water kefir the main source of macro- and micronutrients, including nitrogen (amino acids from the protein fraction), sulfur, phosphorus, vitamins, and minerals, besides sucrose. Differences in the amino acid biosynthesis capabilities between microbial species may make them depend on each other to supply limiting amino acids, such as tryptophan, tyrosine, methionine, and histidine, by the conversion from other amino acids that are more plentiful in the figs, such as glutamate and aspartate (USDA, 2018).

Water Kefir

What you need to know and what you need to have before you start:

You need between 30 and 100 grams of kefir grains per liter of drink.

The kefir grains can be found in many places. Ask friends, or your local organic store, or look online. They can also be ordered here https://www.manivivendi.nl/kefir-maken-met-kefir-korrels.html

If you have a pot of 2.5 liters then you need between 75 and 250 grams of kefir granules. After every 2 days, the amount of kefir grains has grown by 15% to 20%. Water kefir granules are a living organism. So handle it with care.
Water at room temperature preferably without chlorine (drinking water). Hard water seems to be good.
You need a glass jar. No matter how big.
Plastic colander or a plastic ball sieve or even better the funnel with sieve. Kefir does not like metal.
Sugar. Preferably organic and organic cane sugar is absolutely beautiful.
Organic lemon.
Fruit dried or seasonally. plums, banana, orange, lemon, dates, raisins, it’s all in it. Preferably organic because the pesticides kill the kefir.

How to make 1 liter of water kefir

Put the water in the pot at room temperature.
Kefir grains must also have something to eat. Therefore add approximately 3 to 4 (weight) percent of the water to sugar. So in this case 30 to 40 grams of sugar.
Stir well until the sugar is dissolved.
Add 30 to 100 grams of kefir grains at room temperature.
Then add finely chopped organic fruit. Preferably dried, but not necessary.
Add pieces of organic lemon (finely chopped)
Put the pot away with air permeable nettle cloth 48.
Scoop out the fruit after those 48 hours.
Pour the kefir drink through and our funnel with strainer in a bottle.
The kefir grains have increased in weight and can be used for a subsequent batch. You can make more drinks after each batch.

Caution: store closed bottles with water kefir in the fridge, because that stops fermentation from continuing after the bottle is closed, since that can have unwanted effects like bottles bursting and breaking.

just tap water, granulated sugar and one small piece of my daughter’s dried fig. Nothing else. I harvest the 1st fermentation after 24 or 36 hours, not longer, otherwise the yeast will rise too quickly.

  • Water op kamertemperatuur liefst zonder chloor (drinkwater). Hard water schijnt wel goed te zijn.
  • Een glazen pot. Maakt niet uit hoe groot.
  • Plastic vergiet of een plastic bolzeef of nog mooier de trechter met zeef die wij verkopen. Kefir houd niet van metaal. 
  • Suiker. Liefst natuurlijk biologisch en biologisch rietsuiker is helemaal mooi.
  • Biologische citroen.
  • Fruit gedroogd of van het seizoen. pruimen, banaan, sinasappel, citroen, dadels, rozijnen, het mag er allemaal in. Liefst wel biologisch omdat de bestrijdingsmiddelen de kefir dood.

Hoe maak je 1 liter waterkefir.

  • Doe het water op kamertemperatuur in de pot.
  • Kefir korrels moeten ook te eten hebben. Voeg daarom ongeveer  3 a 4 (gewichts)procenten van  het water aan suiker toe. Dus in dit geval 30 a 40 gram suiker.
  • Goed roeren tot de suiker is opgelost.
  • Doe er 30 tot 100 gram kefir korrels op kamertemperatuur bij.
  • Voeg dan fijn gesneden biologisch fruit toe. Liefst gedroogd, maar niet noodzakelijk.
  • Voeg stukjes biologische citroen toe (fijn gesneden) 
  • Zet de pot weg met luchtdoorlatend neteldoek 48 weg.
  • Schep na die 48 uur het fruit er uit.
  • Giet de kefirdrank via en onze trechter met zeef in een fles.
  • De kefirkorrels zijn in gewicht toegenomen en kunnen voor een volgende batch gebruikt worden. U kunt na iedere batch meer drank maken.

Opmerking: ze zegt dat je melk kefir korrels niet voor water kefir kan gebruiken, maar wij doen dat wel met succes.
